Each Grape begins a life as a tiny berry of acid. The longer they remain on the vine the more they lose (respiration) while concomittantly developing sugars (photosynthesis). During fermentation, yeast converts these sugars (glucose & fructose ) into alcohol ( and CO2). While an infinite number of factors play a role, it is primarily this balance between acid and alchol that determines the principal style of the wine.
